Wildflower or weed?

I guess it’s all in the perspective.  I know one thing, I sure itched by the time I finished trying to get this picture.

According to my Audubon Society Field Guide to North American Wildflowers, this is a Oyster Plant or Salsify from the sunflower family.  I think we called them goat’s beard.  Supposedly its roots can be boiled and eaten and they taste like oysters. 

All right then, oysters right here in Kansas.
